Early Stopping Options default to present #111
Description
Currently, if you omit early stopping options, they are assumed to be None. Preferably, we automatically perform early_stopping but this requires disambiguating between None and key missing in the config. Related to this issue here: serde-rs/serde#984
This has to be supported across training from the config file and the language libraries.
